Gluten-Free Chocolate Chip Cookies

Ingredients:

  • 2 ½ cups of Gerti’s Gluten-Free Flour
  • 1 tsp Baking Powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter (softened)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1 12oz package gluten-free chocolate chips

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the Gerti’s Gluten-Free Flour, baking soda, baking soda, and salt.
  3. In another bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Stir in the gluten-free chocolate chips.
  7. Put dough in a freezer safe bag. Freeze for atleast 5 hours.
  8. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  9. Bake for 10-12 minutes or until golden brown.
  10. Let cool on a wire rack before enjoying these delicious, gluten-free cookies!

I love this recipe!! I make a batch and keep them in the freezer. When the granddaughters are visiting I can just pop some in the oven for a special treat.
