Gluten Free Oatmeal Raisin Cookies

Ingredients

3/4 Cup softened Butter

3/4 Cup White Sugar

3/4 Cup packed Brown Sugar

2 Large Eggs room temp.

1 tsp. Vanilla Extract

1 1/4 Cups Gerti's GF Flour Blend

1 tsp. Baking Soda

3/4 tsp Cinnamon

1/2 tsp. Salt

2 3/4 Cups GF Rolled Oats

1 Cup Raisins or Chocolate Covered Raisins.


Beat Butter and both sugars in large bowl or stand mixer until smooth. Beat in eggs and vanilla until fluffy

Add Flour, Baking Soda, Cinnamon, and Salt to Butter mixture. Stir in GF Rolled Oats and Raisins.  

Chill batter for 30 minutes.

Preheat oven to 375 degrees. Line cookie sheet with parchment paper. Drop tablespoonfuls of batter about 2 inches apart onto cookie sheet. Bake for 10 - 12 minutes. Let rest for a moment on the cookie sheet then transfer to cooling rack. 


I have always loved oatmeal raisin cookies! Today I got to bake them with one of my granddaughters. She absolutely loved them. She said they have a bold yummy flavor! I love that special time I have with each of my granddaughters.
