Lime and White Chocolate Chip Cookies

INGREDIENTS:


  2 1/2 Cups Gerti's Flour

  1 tsp. Baking Powder

  1 tsp. Baking Soda

  1 Tbl. Fresh Lime Zest

  1/2 tsp. Salt

  3/4 cup Softened Butter 

  3/4 cup Brown Sugar

  1/2 cup Sugar

  2 tsp. Lime juice

  2 Large Eggs

 1 package of White Chocolate Chips


INSTRUCTIONS:


     In a medium bowl mix Gerti's flour, baking soda, baking powder, salt and lime zest. Set aside.

In a large bowl or your stand mixer cream butter, brown sugar and regular sugar until light and fluffy.

  Add eggs and lime juice to sugar mixture. Mix until incorporated. 

  Gradually add dry ingredients mixing until combined. Stir in white chocolate chips.

  Put dough in freezer bag, flatten as best you can. Freeze overnight or at least 5 hours.

 

When ready to bake:


   Preheat oven to 375 degrees. 

   Line cookie sheets with parchment paper. 

  Put tablespoon sized balls of dough on cookie sheet. Leave some room for them to expand.

  Bake 11 - 13 minutes (depends if you like soft of cruchy)

  Cool on a wire rack. 



Back in 1990 I was in Texas visiting my best friend. She bought a bag of Key Lime White Chocolate Chip Cookies. I was instantly hooked!! When I couldn't have gluten anymore, I knew I'd have to create my own recipe.
