Peanut Butter Cookies
Ingredients:
1/2 Cup room temp. Butter
1/2 Cup real Peanut Butter
1/2 Cup Sugar
1/2 Cup packed Brown Sugar
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder
1 Egg room temp.
1/2 tsp. Vanilla
1 1/2 Cups Gerti's GF flour
In a large bowl beat butter and peanut butter medium to high until combined. Add sugar, brown sugar, baking soda, and baking powder, beat until combined (scrape sides as needed). Add the egg and vanilla until well blended. Add Gerti's flour, mixing well. Cover and chill for at least half an hour or overnight.
Preheat oven 375 degrees. Prepare parchment paper for sheet pan (I have several pre-sized for the sheet pan).
Make 1-inch dough balls. Place about 1 1/2 inches apart on sheet pan. Use a fork to flatten the dough balls in a criss cross pattern. Bake for 7 - 9 minutes, let cool a moment on the cookie sheet then transfer to cooling rack.
My boyfriend has been asking for chocolate cookies with peanut butter chips. I decided to add chocolate chips to my peanut butter cookies. He absolutely loves them. I used about half a bag of chocolate chips.
Since I was a little girl, I've loved peanut butter cookies. As an adult, I'd bake some and spread jelly on one and make sandwich cookies for hiking. They pack out really easy and are great for energy.
