Ingredients
For the scone dough:
1 Cup Buttermilk, cold
1/4 Cup Sugar
1 Large Egg
1/2 tsp. Salt
3 Cups Gerti's Gluten Free Flour
2 1/2 tsp. Baking Powder
10 Tbs. Unsalted Butter cold sliced thin
1 Cup Fresh Strawberries, diced
1 Tbs. sugar (for topping)
For the glaze.
1 Cup Powdered Sugar
1/4 tsp. Vanilla Extract
1 Tbs. Milk, cream or water.
Preheat oven 375*F. Line large baking sheet with parchment paper.
In a 2 cup measuring cup combine buttermilk, egg, sugar, and salt; whisk until dissolved.
In a large bowl whisk together the flour and baking powder. Add thinly sliced cold
butter to flour. Using a pastry cutter blend flour and butter until pea size (I used my gloved hands to finish blending). Add the strawberries to the flour mix and gently fold until the
berries are incorporated. Add the buttermilk mixture and stir with a stiff spatula until the dough comes together and no dry flour remains. Try not to smush the strawberries.
Take a large pie pan and double line it with plastic wrap. Pour dough into the prepared pie pan. Sprinkle a little flour on top if to sticky. Pat the dough into the pan. Take the prepared baking sheet and place it upside down over the pie pan. (like you would do with a cooling rack to flip a cake out to cool) Flip the baking sheet and pie pan over so the dough now sits on the baking sheet. Remove the plastic wrap. Slice the dough into 8 triangles. Gently separate each slice (I used a pie server). Lightly brush milk onto the slices. Generously sprinkle with sugar.
Bale for 25 - 30 minutes (they'll be golden brown).
Prepare the glaze:
Whisk the powdered sugar, vanilla extract and liquid (add more liquid if to thick). Drizzle over the scones and enjoy.
My granddaughter and I had a great time baking these. She's been baking with me since she was 5 years old.
When looking at recipes for this I noticed some had egg others didn't. Some used buttermilk, some heavy cream, others milk. I asked a baker friend for suggestions. She said either buttermilk or heavy cream and definitely an egg. I'm glad I asked, they came out amazing.
